Liquid sugar — liquid sucrose — is crystalline sugar pre-dissolved into a ready-to-pump syrup. Beverage plants, dairies and industrial bakeries use it to remove the dissolving step and dose sweetness straight into tanks and mixers. Cane and beet liquid sucrose, high-colour grades and organic liquid sugar are supplied in totes and tankers.
Dextrose is corn-derived glucose used for controlled sweetness, browning and fermentation in baking, brewing, confectionery, sports nutrition and cured meats. At roughly 70% the sweetness of sucrose it gives formulators room to fine-tune. It is stocked as powder in 50 lb bags and supersacks, plus a liquid blend.
Store cool and dry — below 80°F and 60% relative humidity — palletised off the floor and away from moisture and strong odours, both of which sugar absorbs. Properly stored granulated sugar has an indefinite shelf life, while brown and liquid sugars have shorter windows, which is why moisture is documented on every COA.
